BBQ is more than food. It’s a reason to slow down. To step away from the noise, put the phone down and reconnect with what matters — fire, food and good people.

There’s something special about lighting a fire, preparing good food and then letting time do the work. No rushing. No shortcuts. Just fire, smoke, patience and good company.
 

Whether it’s Texas-style BBQ, low ’n’ slow smoking or live-fire cooking, the process is just as important as the final bite. There’s the anticipation, the smell of the smoke, the crackle of the fire and those long hours spent around the smoker. It’s about slowing down, getting your hands dirty and enjoying the journey as much as the food itself - and that's what Pitmaster Pearse is all about.

I share the techniques, recipes, BBQ equipment and experiences that make live-fire cooking and low ’n’ slow BBQ worth taking your time over — from cooking the perfect brisket to mastering fire management and getting the most from your smoker.

What started as a lockdown hobby has evolved into working alongside some of the best pitmasters from around the world, working at internationally renowned live-fire events and supporting several incredible brands and now I’m here to share it in Aotearoa! 

 

Pitmaster Pearse is about making Texas BBQ and live-fire cooking accessible, enjoyable and worth taking your time over. And there’s plenty more to come — from BBQ classes and private events to brand collaborations and content creation - the best is yet to come!

Because good BBQ takes time. And that’s the point.
